Guatemala celebrates two festivals in one in early November, with All Saints Day and the Day of the Dead. Celebrations take place all over the country, with interesting variations in different regions and provinces. In the town of Cuchumatán in the highlands you can see wild horse racing that also involves the copious consumption of alcohol. In the towns of Santiago Sacatepéquez near Antigua (Guatemala) the Day of the Dead celebrations are a huge party in the graveyard for the day, and they fly massive kites over the cemetery. This is the festival when you can enjoy Guatemala's famous Fiambre, a kind of stew that consists of just about everything that is available (although there are thousands of different recipes), which is eaten only over these two days.
